 A STUDY IN MOSAIC

Brewer's Notes:  Mosaic is such a wonderful hop for single hopped beers as it displays so many different faces, particularly when used in leaf, pellet and cryo pellet form.  Here we used all forms of fresh Yakima Mosaic at all stages of the brew for an expressive, heavily tropical focussed beer.  Really a classic expression of us as a brewery with balance and overall drinkability combining with Mosaic intensity and with nothing being sacrificed at the altar of porridge mouthfeel.    

 A STUDY IN CITRA 

 

Style: Citra India Pale Ale.

ABV: 6%

Hops: Citra

Brewer's Notes:  Lovely balanced malt base of Crisp Extra Pale, Maris Otter, Chit and also a first in our beers - Briess Blonde Roasted Oats imported from North America at 10% of the grist.  Whirlpool, dip hopped and warm dry hopped with Citra.  Cool dry hopped with Cryo Citra.  An intense Citra experience, with mango, wild citrus and pronounced lychee.  I'm always slightly sceptical about how such a small % in the grain bill will impact beer.  However, colour me impressed even at a 10% of the grain bill the blonde roasted oats definitely make their presence known with really nice background toasty, lightly vanillary licks.  Really nice structure to the beer with a medium mouthfeel with low towards medium bitterness.  

 CREMA 

 

Style: Imperial stout conditioned on coffee in collaboration with Black Mountain Roast.

ABV: 10%

Hops: Warrior

Serving: Serve at fridge temperature and allow to warm over drinking.  Coffee aroma and flavour will fade over time so drink now rather than cellar.  Try a shot of cold brew coffee in the stout for an intense coffee experience.  Try mixing this beer with its sister beer Cocoa for coffee chocolate indulgence.  

Brewer's Notes:  Big, indulgent stout aged on Brazilian, Columbian and Honduran coffee beans freshly roasted for us by Black Mountain Roast in Hay on Wye,  Fresh coffee aroma, silky mouthfeel and roasty toasty goodness from 9 different malts used in the brewing process. 

 COCOA 

 

Style: Imperial stout conditioned on cacao.

ABV: 10%

Hops: Warrior

Serving: Serve at fridge temperature and allow to warm over drinking.  Chocolate aroma and flavour will fade over time so drink now rather than cellar.  Try mixing this beer with it's sister beer Crema for coffee chocolate indulgence.  

Brewer's Notes:  Sister beer to Crema.  Same base stout recipe.  The beer was conditioned on pure liquid cacao.  Sweeter than Crema with distinct creamy milk chocolate character,  

 STREET STRUCK (a track by Big L) 

 

Style: India Pale Ale

ABV: 6%

Hops: Hot side - Mosaic/Citra.  Cold Side - Citra, Cryo Azacca, Cryo Amarillo, Cryo Columbus.

Brewer's Notes:  Intense, bright mango on the nose, pineapple.  Medium mouthfeel leading to waves of tropical fruit and citrus and lip smacking bitterness that really makes the hoppiness of the beer snap, crackle and pop.

Brewer's Notes:  Freshly opened hop bag aroma, some sweet orange.  Medium to full mouthfeel with medium bitterness.  In the mouth  tropical, with oranges, lime and grapefruit.

Hops: Hot side - Mosaic/Citra.  Cold Side - Citra, Cryo Azacca, Cryo Ekuanot, Cryo Simcoe, Cryo Columbus.

Brewer's Notes:  Conan yeast strain presents peach accentuated by Citra with copious tropical and bright stone fruit from the Cryo additions.  Medium mouthfeel with balanced bitterness.

Brewer's Notes:  Carahelles, chit, oat malt, water treatment and yeast selection mean this beer is full bodied at 5%.  Mosaic and Cryo Ekuanot are ripely tropical with a restrained addition of Cryo Columbus providing lush, sweet marijuana notes.
